From the first tea leaf steeped in hot water there have been discoveries in tea. Hojicha is one of the bolder experiments. During the 1920's a tea master in Kyoto, Japan innovated a new method of producing tea. The traditional method of steaming is still used in most Japanese teas today. Instead, Hojicha is manufactured by baking newly plucked leaves in a porcelain bowl over a charcoal fire. The end result, green and brown variegated leaves with a grassy toasted flavor that is low in caffeine. Tea brews a reddish tan and due to lower caffeine is a preferred tea for after dinner, children and the elderly.
Put 1 slightly heaping tsp. of loose tea for each 7-9 oz/200-260ml of water in cup or teapot. Pour freshly boiled water over tea. Steep 3-7 min. Add milk and sweetener to taste.
(1L/1Qt) Place 6 slightly heaping tsp. of loose tea into teapot. Pour 1.25 cups/315ml boiling water on tea. Steep 5 min. Fill one quarter of serving pitcher with cold water. Pour strained tea into pitcher.Add ice, top off with cold water, garnish and sweeten to taste.
Hojicha originally came out of the Kyoto region of Japan. Prior to 2011, this area was home to almost all production of Hojicha. Unfortunately, the tragedy of the 2011 Fukushima nuclear accident has caused most buyers to source teas elsewhere. The Discovery Tea Company is no acception. Our Hojicha is currently manufactured in China using Japanese techniques and specs.
